Chorizo, Tomatoes and Eggs (in a pan)

Saw something like this in a Joe Wicks book – so decided to give it a whirl

  • Warm olive oil in a frying pan (with a lid) -- then add in the chorizo, onions and chilli / chilli flakes and fry for 5 mins
  • Add in the tomatoes and spinach, cover, and cook for 5 mins or so till tomatoes are soft. Stir occasionally
  • Make two small "wells" in the pan and crack an egg into each ... cover for about 5 mins till cooked
