Chorizo, Tomatoes and Eggs (in a pan)

Saw something like this in a Joe Wicks book - so decided to give it a whirl

Ingredients
  • 4 tomatoes, quartered
  • 2 eggs
  • 60 g chorizo (chopped)
  • 3 spring onions
  • olive oil
  • 1 handful cheese (( parmesan, cheddar))
  • 2 handful spinach (It will all wilt away to nowt by the end)
  • pinch chilli flakes (Or half red chilli ?)
Instructions
  1. Warm olive oil in a frying pan (with a lid) -- then add in the chorizo, onions and chilli / chilli flakes and fry for 5 mins
  2. Add in the tomatoes and spinach, cover, and cook for 5 mins or so till tomatoes are soft. Stir occasionally
  3. Make two small "wells" in the pan and crack an egg into each ... cover for about 5 mins till cooked
