Chorizo, Tomatoes and Eggs (in a pan)
Saw something like this in a Joe Wicks book - so decided to give it a whirl

Ingredients

tomatoes, quartered

eggs

g
chorizo
(chopped)

3
spring onions
-
olive oil
-
1
handful cheese
(( parmesan, cheddar))

handful spinach
(It will all wilt away to nowt by the end)

pinch chilli flakes
(Or half red chilli ?)
Instructions

Warm olive oil in a frying pan (with a lid) -- then add in the chorizo, onions and chilli / chilli flakes and fry for 5 mins

Add in the tomatoes and spinach, cover, and cook for 5 mins or so till tomatoes are soft. Stir occasionally
-
Make two small "wells" in the pan and crack an egg into each ... cover for about 5 mins till cooked
