Spiced “toasted” tea-cakes . Makes 8

Instructions
- Mix flour, sugar, yeast, mixed spice in bowl and add 1 tsp salt (away from yeast)
- Mix melted butter, warm milk and water - make sure not too hot / warm - else will kill yeast
- Mix together - then knead for 5 / 10 mins -
- Leave for 1 -> 1.5 hours covered in warm place till doubled in size
- Mix in the fruit - make into 8 equal size bread rolls
- Add to baking tray and "flatten" them - they will rise. Cover and leave for hour
- Brush each with egg wash then add to pre-heated (180 degrees fan ) oven - and bake for 20 mins
- Remove and allow to cool on wire rack
