Spiced Tea Cakes

Spiced "toasted" tea-cakes . Makes 8

Ingredients
  • 350 g bread flour (I use 250 - 300 white and a bit wholemeal)
  • 30 g melted butter
  • 100 ml milk (warmed)
  • 100 ml water
  • 1 tsp Mixed Spice - make it a heaped tsp !!
  • 7 g Fast yeast
  • 75 g dried fruit ( e.g sultanas)
  • 2 tbsp sugar
Instructions
  1. Mix flour, sugar, yeast, mixed spice in bowl and add 1 tsp salt (away from yeast)
  2. Mix melted butter, warm milk and water - make sure not too hot / warm - else will kill yeast
  3. Mix together - then knead for 5 / 10 mins -
  4. Leave for 1 -> 1.5 hours covered in warm place till doubled in size
  5. Mix in the fruit - make into 8 equal size bread rolls
  6. Add to baking tray and "flatten" them - they will rise. Cover and leave for hour
  7. Brush each with egg wash then add to pre-heated (180 degrees fan ) oven - and bake for 20 mins
  8. Remove and allow to cool on wire rack
