Spiced Tea Cakes
Spiced "toasted" tea-cakes . Makes 8
Ingredients

g
bread flour (I use 250 - 300 white and a bit wholemeal)

g
melted butter

ml
milk (warmed)

ml
water

tsp
Mixed Spice - make it a heaped tsp !!

Fast yeast

dried fruit ( e.g sultanas)

sugar
Instructions

Mix flour, sugar, yeast, mixed spice in bowl and add 1 tsp salt (away from yeast)

Mix melted butter, warm milk and water - make sure not too hot / warm - else will kill yeast

Mix together - then knead for 5 / 10 mins -

Leave for 1 -> 1.5 hours covered in warm place till doubled in size

Mix in the fruit - make into 8 equal size bread rolls

Add to baking tray and "flatten" them - they will rise. Cover and leave for hour

Brush each with egg wash then add to pre-heated (180 degrees fan ) oven - and bake for 20 mins

Remove and allow to cool on wire rack
