Roasted Butternut Squash With Feta, Bacon, Spinach, Chorizo

- Half butternut squash, scoop out the seeds, , drizzle with olive oil, season with salt / pepper / cumin and place flesh side down in 180 heated oven OR in the Air Fryer !!!
- Cook for 40 mins (oven) or 30 mins (air fryer) - till soft
- Fry bacon with chorizo and spices till cooked - then add in spinach till it wilts. Once wilted mix in the feta
- Remove squash from over -- scoop out bit more flesh and put into into the big hollow already in squash -- so its all level - then add in the feta/bacon mix
- Add back to over for 10 mins
- Serve with yoghurt / coriander
