butternut squash
(halved, seeds scooped)

chorizo

(crumbled)

Instructions

Half butternut squash, scoop out the seeds, , drizzle with olive oil, season with salt / pepper / cumin and place flesh side down in 180 heated oven OR in the Air Fryer !!!

Cook for 40 mins (oven) or 30 mins (air fryer) - till soft

Fry bacon with chorizo and spices till cooked - then add in spinach till it wilts. Once wilted mix in the feta

Remove squash from over -- scoop out bit more flesh and put into into the big hollow already in squash -- so its all level - then add in the feta/bacon mix

Add back to over for 10 mins

Serve with yoghurt / coriander
