Roasted Butternut Squash With Feta, Bacon, Spinach, Chorizo

Ingredients
  • butternut squash (halved, seeds scooped)
  • 2 rashers bacon
  • 50 g chorizo (chopped)
  • 100 g spinach
  • 100 g feta (crumbled)
  • 1 tsp smoked paprika
  • 1 tsp cumin
Instructions
  1. Half butternut squash, scoop out the seeds, , drizzle with olive oil, season with salt / pepper / cumin and place flesh side down in 180 heated oven OR in the Air Fryer !!!
  2. Cook for 40 mins (oven) or 30 mins (air fryer) - till soft
  3. Fry bacon with chorizo and spices till cooked - then add in spinach till it wilts. Once wilted mix in the feta
  4. Remove squash from over -- scoop out bit more flesh and put into into the big hollow already in squash -- so its all level - then add in the feta/bacon mix
  5. Add back to over for 10 mins
  6. Serve with yoghurt / coriander
