Cod with artichoke, spinach and creamy beans

Yields: 2 Servings Difficulty: Easy

Straight out of the Waitrose newspaper – done in slow cooker – so uses less liquid. If doing on hob then possibly add more

  • Char-grill the artichokes and set aside
  • Add shallots to pan and fry in olive oil for a few mins -- then add garlic, then the grilled artichokes and drained beans
  • Stir in the spinach, add the wine and stock then cover for about 5 mins
  • Add the fish onto the pan - season - then cover for 10+ mins - till it looks cooked !
  • Stir the cream into the sauce and serve
