Cod with artichoke, spinach and creamy beans
Straight out of the Waitrose newspaper - done in slow cooker - so uses less liquid. If doing on hob then possibly add more
Ingredients

cod loins

2 shallots
sliced / diced

cloves garlic

tin haricot beans - drained

tbsp
cream

100ml
white wine / martini

100ml
veg or chicken stock

tin artichoke hearts

spinach
Instructions

Char-grill the artichokes and set aside

Add shallots to pan and fry in olive oil for a few mins -- then add garlic, then the grilled artichokes and drained beans

Stir in the spinach, add the wine and stock then cover for about 5 mins

Add the fish onto the pan - season - then cover for 10+ mins - till it looks cooked !

Stir the cream into the sauce and serve
