Cod with artichoke, spinach and creamy beans

Straight out of the Waitrose newspaper - done in slow cooker - so uses less liquid. If doing on hob then possibly add more

Ingredients
  • 2 cod loins
  • 2 shallots sliced / diced
  • 2 cloves garlic
  • 1 tin haricot beans - drained
  • 2 tbsp cream
  • 100ml white wine / martini
  • 100ml veg or chicken stock
  • tin artichoke hearts
  • 150 g spinach
Instructions
  1. Char-grill the artichokes and set aside
  2. Add shallots to pan and fry in olive oil for a few mins -- then add garlic, then the grilled artichokes and drained beans
  3. Stir in the spinach, add the wine and stock then cover for about 5 mins
  4. Add the fish onto the pan - season - then cover for 10+ mins - till it looks cooked !
  5. Stir the cream into the sauce and serve
