Quick Pickled Red Onions

Ingredients
  • red onion - halved and thinly sliced
  • 40 ml orange juice (or juice 1 orange)
  • 20 ml lime juice (or juice 2 limes)
  • salt and black pepper pepper
  • 10 ml apple cider vinegar (or other vinegar if cannot get)
Instructions
  1. Cover sliced onions in boiling water and leave for 10 mins, drain then combine with rest of ingredients and put in a jam jar Leave for an hour or so
