Sweet Potato, Carrot and Bean Burger

Sort of borrowed from thisĀ https://cookieandkate.com/best-veggie-burger-recipe/ Too sloppy to risk on the BBQ so "fryed" them ( in next to no oil ) Original recipe called for black beans but mixed / haricot / kidney etc will do the job (i.e. what you got in the cupboard)

Ingredients
  • 2 sweet potatoes (peeled, chopped)
  • 2 carrots (peeled, chopped)
  • small red onion (thinly diced)
  • 2 cloves garlic (grated )
  • 50 g quinoa
  • 2 tin beans (mixed / black whatever)
  • 100 g bread crumbs (e.g. 2 * tortilla wraps)
  • 2 tsp ground cumin
  • tsp ground coriander
  • 1 tsp chili powder
Instructions
  1. Boil carrots and potatoes till soft, mash and set aside to cool / dry out a bit (OR put in oven and cook to give drier end result)
  2. Cook quinoa as per packet ( e.g. simmer for 15 mins ) - add in the beans half way though to warm though / cook. Set aside to cool and lose some moisture
  3. Add chopped onion, garlic, breadcrumbds, cumin, coriander, chili powder into large mixing bowl - - and then add in potato/carrot mix and beans/quinoa mix when cooled.
  4. Mix well, taste it and add more spices / seasoning if rwequired - then cool in fridge to allow it to firm up
  5. When cooled / firmed - heat a bit of oil in frying pan, make a couple of patties from the mix and cook - turning half way -- should be about 10 mins (make sure they don't burn though)
  6. Serve with a salad, yoghurt etc
