Something Satay
This is the saucy part of a Satay curry type thing ... server with rice etc . . .
We had it with prawns and red peppers - was really good.
Ingredients

coconut milk

peanut butter

tsp
sugar

1/2
tsp
chili flakes

tsp
ground coriander

tbsp
soy sauce

tbsp
fish sauce

tbsp
lime juice
(from a lime or from a cheap bottle of the stuff)

peanuts
(crushed (and toasted if bothering))

bunch coriander
(chopped, to serve)

Instructions

Add peppers, prawns, chicken etc to quickly fry before starting the main event
Add in the ground coriander
Mix in rest of ingredients ( apart from peanuts ) - and cook slowly -- leave to thicken a bit if it needs to.
Serve topped with crushed peanuts

Addi n peanut butter, coconut milk, fish sauce, soy sauce, sugar
And heat till simmering -- taste and add in more of whatever

Add in the lime -- and add in more of whatever till it tastes good

Serer with rice, topped with fresh coriander and toasted peanuts
