Something Satay

This is the saucy part of a Satay curry type thing ... server with rice etc  . . . We had it with prawns and red peppers - was really good.

Ingredients
  • 200 g coconut milk
  • 3 tbsp peanut butter
  • 2 tsp sugar
  • 1/2 tsp chili flakes
  • 1 tsp ground coriander
  • tbsp soy sauce
  • tbsp fish sauce
  • tbsp lime juice (from a lime or from a cheap bottle of the stuff)
  • 2 tbsp peanuts (crushed (and toasted if bothering))
  • bunch coriander (chopped, to serve)
  • 50 g peanuts
Instructions
  1. Add peppers, prawns, chicken etc to quickly fry before starting the main event Add in the ground coriander Mix in rest of ingredients ( apart from peanuts ) - and cook slowly -- leave to thicken a bit if it needs to. Serve topped with crushed peanuts
  2. Addi n peanut butter, coconut milk, fish sauce, soy sauce, sugar And heat till simmering -- taste and add in more of whatever
  3. Add in the lime -- and add in more of whatever till it tastes good
  4. Serer with rice, topped with fresh coriander and toasted peanuts
