Sausage and Chard Ragu with Polenta (with or without Creme Fraiche – which I forgot to buy )

Ingredients
  • 4 sausages (skins removed)
  • 200 g swiss chard (stalks removed then chopped)
  • 50 ml creme fraiche (or a bit of cream)
  • 2 portions of polenta (read packet for portion control)
  • 50 g parmesan cheese (grated)
  • 1 shallot (finely chopped)
  • 1 clove garlic (finely chopped)
  • 1 tsp nutmeg
Instructions
  1. Start making the polenta - or if fast polenta then hold on a bit till 5 mins before everything else ready ... basically polenta needs to be ready at same time as sausage mix
  2. Add a bit of oil to a pan and fry up the sausages- breaking it up so not large chunks
  3. After 5 mins add in the shallot and chard stalks and cook for a few more mins
  4. Add in the nutmeg with a bit of salt / pepper and mix in
  5. Add in creme fraiche - with a bit of extra water to stop everything clogging up
  6. Cook for 5 mins then add in half the parmesan and chard leaves - cook for a few mins more
  7. Serve with the cooked polenta - sprinkled with rest of parmesan
