Pumpkin and Mascarpone Pasta
Roasted Pumpkin and Mascarpone Pasta - with garlic, chilli flakes, chorizo
Next time possibly swap out the chorizo for walnuts ? ? ?
Can add in spinach for example for a bit more healthiness

Ingredients

(seeds removed - chopped into small chunks)

chorizo - or lardons - or walnuts

Instructions

Add cubed pumpkin, garlic cloves, chilli flakes and herbs to roasting try, mix with a few tablespoons of (olive) oil - and salt / pepper

Cook in oven for 30 mins at approx 200 degrees ( I used air fryer at 185 ) - it burns it otherwise ! Mix it up regularly to ensure all bit get cooked evenly

With approx 15 cooking time left add pasta and boil

Finely chop chorizo and fry in oil for 5 or so minutes .. towards end add in spinach for a minute or so to wilt

When pumpkin roasted whizz up in food processor -- add some pasta cooking water if too thick.

When cooked drain pasta and add to chorizo pan - along with blitzed pumpkin stuff

Add in the mascarpone cheese and stir in till mixed
