Pork and Mushroom Stroganoff

An easy Saturday night tea . . . . going slightly off-piste with chilli flakes

Ingredients
  • 1/2 onion (finely chopped)
  • 2 cloves garlic (finely chpped)
  • 200 g pork loin steaks (sliced into thin 1cm wide strips)
  • 150 g mushrooms (sliced)
  • 100 ml stock
  • 1 tsp mustard
  • 2 tsp smoked parika
  • 2 tbsp soured cream
  • 2 portions rice
  • pinch chilli flakes
  • parsley (to serve)
Instructions
  1. Heat some oil in pan and add onions - cook for 5 mins before adding pork / garlic and a pinch of chilli flakes- then cook for further 2 mins
  2. Mix in the paprika - stir well - then add the mushrooms - then leave for another few minutes - stirring frequently
  3. Stir in the mustard ( I used Dijon ) then add the stock - stir - and leave to simmer down / reduce
  4. Take off the heat - mix in the soured cream and serve (with rice ?) and a bit of parsley on the top to make it look good
