Mexican Pulled Pork

Slow cooked pork shoulder. Slow cooked in orange juice / coke

Ingredients
  • 2 kg pork shoulder (Cut into 6 to 8 pieces)
  • 1 onion (cut into wedges)
  • 8 cloves garlic
  • 180 ml cola
  • 180 ml orange juice
  • 2 bay leaves
  • 2 limes (juiced)
  • 3 tsp salt
  • tsp pepper
  • tbsp oregano
  • tbsp ground cumin
  • 1/2 tsp cinnamon
Instructions
  1. Cut pork shoulder into 6 to 8 large pieces - pat dry with paper towel OPTIONAL - season with salt / pepper / cumin - and quickly brown all pieces with a bit of oil in slow cooker then set aside
  2. [Once all pieces are browned then return all to pot and] add in rest of ingredients EITHER slow cook for 8 to 10 hours OR Cover and put in fridge overnight (better flavour)
  3. Once done then remove pork and shred .. then add back into the liquid.
  4. For real mexican carnitas you should take out a chunk of shredded pork and fry till a bit crispy before throwing into tacos / burritos etc
