Leek and Potato Soup

This is a Cat favourite. Simple and tasty !! If you like a "creamier" soup then add milk with less stock

Ingredients
  • 2 Leeks
  • 500 g Potatoes (peeled)
  • 300 ml vegetable stock (single stock cube will do)
  • 200 ml milk (optional - if not using then just use more stock)
  • butter / oil (for sweating the leeks)
  • pinch salt / pepper
Instructions
  1. Trim and wash and chop leeks. Peel and chop potatoes into equal sized chunks
  2. Prep
  3. Melt butter / oil and sweat leeks for 5 mins or so. Add potatoes for 5 mins. Add in stock, cover and cook for 20 mins till potatoes are soft. Add in milk (if using) and warm.
  4. Use a (stick) blender to blend. Season with salt / pepper.
