Leek and Potato Soup
This is a Cat favourite.
Simple and tasty !!
If you like a "creamier" soup then add milk with less stock

Ingredients

Leeks

Potatoes
(peeled)

ml
vegetable stock
(single stock cube will do)

ml
milk
(optional - if not using then just use more stock)

butter / oil
(for sweating the leeks)

salt / pepper
Instructions

Trim and wash and chop leeks.
Peel and chop potatoes into equal sized chunks
Prep

Melt butter / oil and sweat leeks for 5 mins or so.
Add potatoes for 5 mins.
Add in stock, cover and cook for 20 mins till potatoes are soft.
Add in milk (if using) and warm.

Use a (stick) blender to blend.
Season with salt / pepper.
