Kale Risotto

Kale risotto - form some Waitrose book or other

Ingredients
  • 150 g kale
  • garlic clove - sliced / grated
  • shallot - thin sliced
  • lemon
  • stick celery
  • veg cube
  • 50 g hard cheese (e.g. pecorino)
  • 50 g butter
  • 100 g risotto rice
  • 50 ml white wine or martini
Instructions
  1. add shallot, celery to pan and fry in olive oil / 20g butter
  2. Add Kale to other pan and boil for 5 mins - then remove (keep the water for stock) - and add to blender / nutri-bulli and blend to a puree
  3. Once shallot etc done then add in rice and fry for a couple mins - then add in wine/martini - and boil it off whilst stirring
  4. Make the stock ( use the kale water) - and then start adding slowly to rice - mixing all the time -
  5. Cook for 25+ mins - whilst adding stock ... Then add in the kale, zest and juice of lemon.
  6. Take off heat, add rest of butter and the cheese and stir in .. Leave for a few mins
