Make your own pasta - with a pasta machine and some elbow grease

Ingredients

OO Flour

2
eggs
(If large eggs then perhaps 1 full egg and one yolk)

olive oil
-
tsp
salt
Instructions

Put flour in a heap on a clean flat surface, make a well in the middle and crack in the eggs and the olive oil

Using a fork fold in the sides and mix - eventually it will come together. Get your hands in and mix / knead till it forms elastic dough ... Give it a good going over for 5+ minutes

Wrap in clingfilm and put in fridge for half an hour +

When ready half the dough, roll it out, then pass through the pasta machine , lowering the setting each time.
Place onto a floured surface for 10 mins to harden up slightly whilst you do other half

Its now ready to go -- so get your shape cutters onto the pasta maker if making spaghetti, tagliatelle etc. . . .
