- Boil kettle - pour into pan and add lentils -- cook for 15 mins (till softened) - add more water if dries up. Make a cup of stock with water/veg stock cube
- in other pan - add olive oil and fry off onions, garlic, pepper, chilli - till softening - then add in cumin and chilli powder. When soft (10 mins ?) add in the stock and tomato puree
- After 5 mins drain the lentils and add to the pan with onions etc in it, add a splash of lemon juice Keep topping up if getting too dry (but it needs to be served without much liquid)
- sprinkle tsp of curry powder over top of each fish fillet In a frying pan add olive oil / butter and add fish - cook for 5+ mins - before flipping to other side for a bit less time .
- Divide lentil mixture to bowls - add a bit of yoghurt and coriander - then top each with a fish fillet
- sprinkle with cayenne pepper and serve
