Chip Shop Curry Sauce

  Fish Friday is enhanced by this recipe taken from https://www.easycheesyvegetarian.com/homemade-chip-shop-curry-sauce/ I usually end up adding a bit of sugar if / when the apple is not sweet enough. Could add in a few raisins if you feel like it

Ingredients
  • 1/2 onion (75 g i(sh))
  • apple (Peeled / Chopped into small pieces)
  • clove garlic (chopped / crushed )
  • 2 tsp (medium) curry powder
  • tbsp plain flour
  • 300 ml vegetable stock (Just use a cube / granules)
  • 0 salt & black pepper (As you like it)
  • tsp sugar (Optional - may require more )
Instructions
  1. Sweat onion, apple and garlic for 15 mins Add in curry powder and flour, stir Add in stock - stir Add black pepper
  2. Simmer, stirring regularly, until it reduces down Taste and add more pepper / sugar if required
  3. OPTIONAL - blitz with stick blender to get rid of lumps
