Chicken, Banana and Goji Berry Tikka Massala

This is one from "Indian Superfood" - Gurpareet Bains . . .one of the best recipe books that you can get your hands on !! Do it !! Last time we made this it was with cooked, leftover, chicken. If not using uncooked then just add in the chicken later in the process (unless of course you like it all stringy )

Ingredients
  • tsp fenugreek seeds
  • tsp mustard seeds
  • 2 gal garlic cloves
  • 3 tbsp grated ginger
  • tsp turmeric
  • 2 bananas (mashed to a pulp)
  • 2 green chillies
  • tbsp tomato puree
  • 400 ml (light) coconut milk
  • 500 g chicken breast
  • 2 tbsp goji berries
  • tsp salt
Instructions
  1. Add oil to pan with fenugreek and mustard seeds and heat for 2 mins (or until they start popping)
  2. Add garlic, ginger and chillies and cook for 2 mins - then sprinkle in the turmeric, mix, and cook for a few seconds
  3. Add tomato puree, coconut milk, mashed bananas and salt. Bring to simmer and add in chicken pieces. Cover and cook for 10 mins or so - giving it a stir from time to time.
  4. Add in the goji berries a few mins from end of cooking (otherwise if in too early they turn to a mush and lose their texture )
  5. NOTE: If the sauce becomes too think then add in a bit of hot water to thin it down.
  6. Serve garnished with coriander. Rice goes well with this one !!
