African Beef and Peanut Stew

Slow cooker beef stew with red peppers and a peanut butter sauce. Could easily make with pork, or mushrooms - or a mix of them all ;-) I reckon there is scope to up the chilli content of this one too ! This did enough for 2 of us evening meal ( with rice ) - plus a microwave dinner for 1 the next day Key Ingredients : Beef, Peanuts

Ingredients
  • 250 g stewing beef
  • 3 tbsp peanut butter
  • 200g g tinned tomatoes
  • 2 tbsp tomato puree
  • 1 tbsp ginger (grated)
  • chilli (scotch bonnet - I reckon more if you want hot)
  • 1 tsp coriander
  • 1/2 tsp pepper
  • stock cube (beef / veg whatever)
  • 1 red pepper
  • 1/2 onion (chopped)
  • 2 garlic cloves
Instructions
  1. Add oil to slow cooker -- then add in beef, pepper, onion, chilli, garlic, ginger and fry for 5 mons or so.
  2. Mix in coriander, white pepper and crumbled stock cube. Mix
  3. Add puree, tomatoes, peanut butter and water - mix in
  4. Stew for 3+ hours - giving occasional stir Add more water if too thick
  5. Serve - with Rice
