3-2-1 Pancakes

Called "3-2-1" due to ratio of milk (300ml) Eggs (2) and flour (100g) Becoming the Saturday morning go-to in our house

Ingredients
  • 300 ml mils (skimmed )
  • 2 eggs
  • 100 g plain flour
  • 1 butter (for greasing pan)
  • 1 tbsp oil
Instructions
  1. In a bowl add flour, and crack the eggs Whisk well then slowly start adding the milk - make sure that the first 50ml or so are fully mixed in before adding rest - this makes sure there are no lump Leave to stand for 10 / 15 minutes
  2. Heat a flat pan, wipe a thin layer of butter Slowly add the batter - so that it fills only the centre of the pan - then swill it about so that it gets round to the outsides and makes a thin pancake ( filling the pan results in thick, stodgy pancakes )
  3. Heat on one side till it can slide about when the pan is wiggled -- its now ready to "flip"
  4. If feeling brave toss the pancake onto other side . . .. or, like me, just get a fish slice If doing a savoury, cheesy one - then add the cheese / filling at this point to warm / melt
  5. Put on plate and add with favourite topping. ( Strawberry jam !! )
